I ate bánh khọt, a specialty of Vung Tau, at a small local shop in Ho Chi Minh City. There are four fillings (egg, meat, shrimp, and squid), and they can be made individually or in combination, in single servings. If you want to try all four, there’s also thập cẩm (all four mixed). Since it’s made on the spot, you can enjoy it fresh. The outside is crispy, the inside is chewy, and the accompanying vegetables and shredded green papaya are a perfect match.
